Before opening Post 1917 in the spring of 2024, Carron spent years as a consultant, helping struggling restaurants regain their footing. Now, he brings that same commitment to his own restaurant, blending classic flavors with a modern, ingredient-driven approach.

“At Post 1917, we stay true to our farm-to-table approach and prioritize sourcing local ingredients to ensure the highest quality ingredients go into every meal we serve," Carron said when asked how he would like to influence others. "If I could inspire a movement, it would be for more chefs and restaurants to prioritize sourcing ingredients from local farms because it helps our environment, strengthens communities, and creates a healthier future for all."
Since opening, Post 1917 has quickly gained a reputation for excellence. The menu features premium steaks, fresh seafood, and fine-dining takes on Italian favorites like Chicken Parm and Cacio e Pepe. The bar also stands out, offering craft cocktails that put a creative spin on classic drinks.
